  1. Mix shortening, sugar, egg and vanilla thoroughly. Blend flour, soda and salt; stir in.
  2. Form into roll 2 1/2" across. Wrap in waxed paper. Chill until firm.
  3. Preheat oven to 400 degrees F (200 degrees C).
  4. With a thin sharp knife, slice 1/8 inch thick. Place a little apart on ungreased baking sheet. Bake 8 to 10 minutes.

I was in a hurry to get these made and didn't have time to wait for them to firm in the fridge, so I placed them in the freezer for 20 mins. They were plenty firm and ready to bake!

I divided the dough in half and added red food coloring to half and made pinwheel cookies with it- very good!!
