Directions

  1. Cream together butter and honey. Add eggs, and beat well. Blend in vanilla, and lemon extracts.
  2. In a separate bowl, sift together the flour, baking powder and salt. Gradually add the dry ingredients to creamed mixture, and mix well. Stir in carrots.
  3. Drop by teaspoon on greased baking sheets. Bake at 375 degrees F (190 degrees C) for 15 minutes and cool on racks.

This recipe as is, only rates a 3, as it would be pretty bland; however, with a few other ingredients to spice it up, it has the potential to be a 5. Therefore, I gave it a 4. I added a 2nd ...

These cookies were horrible! I even tried adding cinnamon, nutmeg and lemon zest, and that didn't help

i would not recommend this recipe. it ends up to be really puffy and flavorless.
