Directions

  1. Skin fish, if necessary. Rinse fish and pat dry. Rub both sides of fish with seasoned pepper. In a large nonstick skillet cook the fish fillets in hot oil over medium-high heat for 1 to 2 minutes on each side or until lightly browned. Reduce heat to medium-low. Carefully add margarita mix concentrate to skillet. Cook, covered, for 6 to 8 minutes or until fish flakes easily when tested with a fork. Serve fish and sauce with rice.

This was good. I couldn't find frozen lime drink mix, so I used 1/3 of a cup of limeade beverage and added one fresh squeezed lemon. The poaching liquid makes a nice sauce over vegetables served with the mahi mahi.

This recipe was SO easy and it was awesome!!! The fish had excellent flavor and was moist, flaky and just perfect. This is a new summer favorite dinner for us!!!

This was the recipe I had been searching for! Just follow the recipe, don't overcook the fish and it comes out wonderful! I made it with the garlic asparagus and a box of garlic white and wild rice, delicious! Family loved it, will make again and again!
