Directions

  1. Combine dry ingredients. Mix remaining ingredients until well blended, then gradually add dry mixture. Stir until well blended. Press out on a lightly greased and floured pizza pan. (if you want to add chocolate chips, raisins, or nuts, press them into the dough once it is spread on the pan.)
  2. Bake at 375 degrees F (190 degrees C) for 12-15 minutes until lightly browned. Cool 10-15 minutes in the pan on a rack, then loosen carefully with a spatula. You may leave the cookie in the pan, but if you plan to serve it whole (like a birthday cake), slide it out of the pan at this point and continue to cool on a rack.

This cookie cake turned out great for me! I made it for my sisters birthday and read many reviews before doing so. Many reviewers said that the cookie came out bland, so i added 1 and a half tsp of cinnamon, half a tsp of ground cloves and 1/4 of a teaspoon of nutmeg. (im assuming instead of those 3, allspice would give the same effect as well). I really recommend doing that. I also added some molasses about 1/4-1/2 a tsp. The cookie cake turned out flavorful and soft on the inside yet firm on the outside. PERFECTION! The spices gave it a ginger spice cookie-esk taste but it worked well. I also added chocolate chips and used butter cream frosting. THANKS FOR THE RECIPE! :)

This recipe is just great!! I just followed the recipe exactly and it turned out perfect. I added small pieces of dark chocolate to the top. I also used my hands to mix the batter, it works much better, and floured my hands to spread it on the pan so the batter didn't stick to my hands. You won't be sorry if you try this cookie!

This cookie was very easy and tasted great!! My children and I made it for Daddy for Father's day. It wasn't as big as I thought it would be. I used my 13 inch baking stone, and the cookie didn't cover it. Next time I might double the recipe. That's the only thing I would change.
