Original recipe yields 6 servings

Directions

  1. Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  2. Bring the water to a boil in a large saucepan over high heat. Slowly pour the grits into the water while stirring constantly. Reduce heat to medium-low, and simmer until the grits are tender and thick, 3 to 4 minutes. Stir the grits constantly as they cook. Set aside.
  3. Heat a skillet over medium-high heat, and sprinkle in the grated luncheon meat. Cook, turning occasionally, until the luncheon meat has browned. Pour off any excess grease, and stir half of the luncheon meat into the grits along with the tomatoes, sour cream, and half of the Cheddar cheese. Pour the grits into the prepared baking dish, and sprinkle with the remaining luncheon meat and Cheddar cheese.
  4. Bake in the preheated oven until the casserole is hot and the cheese has melted and is bubbly, about 30 minutes.

"I used bacon flavored Spam and it came out great! I used more cheese than the recipe called for, next time I won't put so much on top. It was a bit too much. Also it would be really good with flavor..." See moreed diced tomatoes (maybe with green chile or jalapeno) and some jack cheese instead or in addition too. Overall, will definitely make again. "

"This shocked me! It was really quite tasty. I was originally put off by the SPAM idea, but was able to "lighten" this up a bit, to about 220 calories for a decently sized portion. I used 2% milk chedd..." See morear cheese, fat free plain yogurt, and turkey SPAM instead of regular SPAM. Also, I had fresh tomatoes on hand so I diced those up instead of using canned, and just microwaved my grits because I had a few packets in the pantry. I would make this again but my husband wasn't even interested in trying it. He said he was put off by the look of it."
