Based on a 2,000 calorie diet

Directions

  1. Separate the eggs. Beat the egg whites until stiff peaks have formed.
  2. In a separate bowl beat the egg yolks until light and lemon colored. Beat in the sugar, oil, flour and orange extract. Beat for about 10 minutes then fold in the egg whites.
  3. On a preheated non-stick waffle iron drop teaspoons of batter. BAKE LIGHTLY. Transfer to racks to cool. Sprinkle with confectioners' sugar.

I have a generations old recipe for gallets that is quite different from this one, heavier, and cinnamon based. These were very light and the orange w/ the sugar was pretty and tasty. I did them in a pizelle iron. excellent
