Quite delicious! Very delicate and dainty. Petticoat Tails can be tinted, use a few drops of red food coloring for pink cookies or a few drops of green for a minty green cookie (add mint flavoring).

Directions

  1. Cream together the butter, confectioner's sugar and vanilla until light and fluffy. Stir in the flour and salt. Press and mold dough into a long smooth roll about 2 inches in diameter. Wrap in plastic wrap and chill for several hours or overnight.
  2. Preheat oven to 400 degrees F (205 degrees C).
  3. Slice chilled roll into 1/8 to 1/16 inch thick slices. Place on ungreased baking sheets and bake at 400 degrees F (205 degrees C) for 8 to 10 minutes or until lightly browned.

yummmm! This was also one of my mom's favorites, but she added some almond extract and dusted the cookies with confectioner's sugar. As a matter of fact, my sister makes them for me whenever she needs to offer me a bribe, lol.

These were always Mom's 'go to' recipe for baby and wedding showers. They are light and crispy and can be colored to match the theme of the party. We just made some for a tea that we recently attended and tinted them green to match the springtime theme. They were a big hit with all. You can also make the dough ahead and freeze, then thaw, slice and bake just before the party.

Ahh-my favorite cookie growing up! these are wonderful, perfect with homemade ice cream because they aren't too sweet. Awesome shortbread flavor!
