Frosty Strawberry Pie

Frosty Strawberry Pie

Jill D

A very yummy summer treat that my mom makes and you can substitute sugar-free gelatin. Be sure to keep it refrigerated! Garnish with whipped cream and walnut halves.

  1. Dissolve gelatin in boiling water and gradually add ice cream, stirring until melted. Note: if pie is to be chilled 3-4 hours before serving, increase to 1 1/2 cups water.
  2. Chill til thick but NOT set (15-25 minutes) and then fold in strawberries and pour into pie crust.
  3. Chill until firm; garnish with whipped cream and walnut halves.

Excellent summer dessert! I took the suggestion of decreasing the hot water so it set well and in good time. You can exchange the strawberries for mandarin oranges and use orange geletin for a nice change.

The pie was very tasty! The only thing is that is took much longer than 20 minutes to firm. Maybe it was just me, but we even put in in the refrigerator and it still didn't firm. But it was very easy, and very tasty. If you like strawberry, you'll love this recipe!!

I found it to work much better when I eventually froze it, as it never really appeared set in the fridge, despite 5 hours of chilling.
