“I came up with this recipe one night for dinner and my husband and family loved it and it has become a regular for us. The combination of spiced apples and brie cheese is amazing. Great served with a spring lettuce salad. You can also make this as an appetizer by using a baguette loaf instead of sourdough slices.”

Original recipe yields 4 servings

Directions

  1. Melt 3 tablespoons of butter in a large skillet over medium heat. Add the apples; cook and stir until tender, 7 to 8 minutes. Stir in the brown sugar, 1 teaspoon of cinnamon and pecans and continue to cook for 1 to 2 minutes longer. Remove from the heat and set aside.
  2. Preheat the oven's broiler.
  3. Cut the slices of bread in half if they are very large and toast lightly. Spread the remaining butter on to one side of each piece of bread. Place two slices of brie cheese onto the unbuttered side of each piece of bread. Top with a generous scoop of the apple mixture. Place the open face sandwiches onto a baking sheet.
  4. Broil until the cheese has melted, about 1 minute. Sprinkle with additional cinnamon if desired.

WOW, this was delicious. Per a suggestion on the recipe exchange, I made this into a french toast recipe by making standard french toast and topping it with the pecan, cheese, and pear mixture. I was suprised how wonderful the flavors went together. Thanks so much, will make this often.

Very yummy! It was a bit hard to taste the brie under the apples and cinnamon (which I didn't really measure, just sprinkled, so maybe I'll use a bit less next time). You could use any type of cheese with this - a sharp cheddar would go nicely and would have a strong enough flavor to taste. Instead of sourdough bread, I used a homemade sweet bread. My husband loved the sandwiches (although wants it for weekend brunches instead of dinner) and my wee ones inhaled the apples. I'll definitely be making this again!

Delish! The combination of flavors is great and I like the sourdough bread (it's a tougher bread and it doesn't get soggy after the warm apples are placed on top). I found broiling it melted the brie nicely. A keeper! Thanks.
