Directions

  1. Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Stir in the linguine, and return to a boil. Cook until the pasta has cooked through, but is still firm to the bite, about 11 minutes.
  2. While pasta is cooking, combine the olive oil, pineapple juice, orange juice, orange zest, lemon zest, salt, pepper, and garlic in a blender. Blend on high speed until smooth.
  3. Pour sauce into a large skillet over medium-high heat. Bring to a simmer and cook for 2 minutes. Add the shrimp and parsley; cook until shrimp are pink and cooked through, 3 to 5 minutes.
  4. Drain the linguini, and place on a serving platter. Spoon the shrimp and sauce over the pasta, and top with a sprinkle of Parmesan cheese.

I made this receipe for my husband tonight he loved it. OMG the flavor was so good. I did not change anything and turned out perfect. Thank you this a winner!

This was so good!! I doubled the recipe and it came out great! I added pineapple chunks to the top of the pasta as well before pouring the sauce and shrimp on top. It was surprisingly light and I was so happy that everyone enjoyed it. I will definitely be making it again soon!

My entire family really loved this recipe. I was a little nervous about all of the fruit juices in a pasta dish but the flavors were awesome. I followed the recipe exactly and I don't think I will be making any changes next time I make it. Yummm... will definately be making this again soon.
