  1. Bring a large pot of lightly salted water to a boil. Add the pasta and cook until al dente, 5 to 7 minutes. Drain, transfer to a large bowl, and cool.
  2. Whisk the sugar, eggs, flour, salt, and reserved pineapple juice together in a saucepan until smooth. Cook and stir over medium heat until the mixture thickens. Pour over cooled pasta, and toss to coat evenly. Cover and refrigerate overnight, or at least 8 hours.
  3. Stir the pineapple chunks and mandarin oranges into the pasta mixture. Mix in the coconut if desired. Stir in the frozen whipped topping until evenly blended. Chill until serving.

Made this for Christmas and everyone loved it! I really liked the different textures and the orzo added more depth to the dish.

Delish. I made this w/o the coconut & there were no leftovers from a company potluck. I might add more mandarin oranges next time, but otherwise quite fab.

This is SO delicious and my lunch guest LOVED it as well.

Yummy! This is the kind of dish you take to a party and hope no one likes it so that you can take it home and have it all to yourself! The next time I nwill increase the orzo to 12 oz uncooked...

Let me start by saying that I have never made an Ambrosia salad before and this receipe sounded good. I was easy to make, tasted OK but I think that my family & I were "thrown" by the texture of...
