Directions

  1. Slice bacon into small pieces and fry until crisp; set aside. Put potatoes in large soup pot and add enough water to cover them; simmer. Meanwhile, cook and stir onions, garlic, celery, and carrots in butter until tender.
  2. When the potatoes are tender, stir in cooked vegetables and bacon. Stir in canned cream. When mixture is just starting to boil, add instant potatoes to thicken to desired consistency. Salt & Pepper to taste.

Delicious, but labor intensive so do yourself a favor and use bacon bits from a bag. The quantities might be a little off, because I halved everything and still had a LOT more than 4 servings. I...

didn't care for this- how ironic to say add the healthy carrots when the soup has 71 grams of FAT and over 1000 calories! Not a good soup for the heart!
