Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Mix the mashed sweet potatoes, white sugar, eggs, 1/2 cup of the butter or margarine, vanilla and flaked coconut. Place in heat proof 2 quart sized casserole dish.
  3. With a fork mix the brown sugar, flour, pecans and the remaining 1/3 cup of butter or margarine. Sprinkle over the top of the potato mixture. Bake at 350 degrees F (175 degrees C) for 30 minutes.

I happened to have a sweet potato that I needed to use, but no almonds or coconuts. So it went without. The fluff was soft sweet tasting, without any unusual flavors or textures. Definitely good, nearing impressive, but not really worth the calories. All that butter and sugar! Hense the 4. Don't tell your guests what's in it and I'd give it a 5.

This recipe is my favorite thus far. The result was amazing. I make it for special occasions and when I want a little something special.

Wonderful side dish and so easy to make. It was a hit with all of my guests. I wouldn't change a thing about this recipe!!!
