We (oops, I must say Bob - the kids wouldn't eat mine) always made a big pot of mashed potatoes once a week. The first night it was mashed potatoes. The second time they became this recipe. The third serving was fried potato cakes.

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Mix the mashed potatoes with the green onions and spoon into one 8x8 inch casserole dish.
  3. Bake for 30 minutes. Spread slices of cheese over the top of the casserole for the last 5 minutes of baking.

This needed something. Made again and added garlic powder to the potatoes, used sharp cheddar, grated, and topped with crisp bacon pieces.

Didn't read the review before I made, and then made again like the other reviewer. I liked much better. The American cheese just doesn't do it justice. I added roasted garlic along with the green onions and mozzarella instead of cheddar. Thanks for the base.

tasty, albeit high in fat. i threw in some green beans and chicken broth, which gave it some additional texture. i made this extra-quick by using the packaged refrigerated carton of mashed potatoes!
