  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, mix corn and butter. Add flour, sugar, pepper, salt, and diced red pepper. Mix thoroughly.
  3. In a small bowl, lightly beat egg yolks.
  4. Heat milk to steaming. Remove milk from heat and stir in yolks. Add to corn mix.
  5. In a medium bowl, beat egg whites until stiff. Stir 1/4 of the whites into corn. Fold in the whites. Pour into deep 2-quart greased baking dish.
  6. Bake at 350 degrees F (175 degrees C). Stir crust that forms down into pudding after 20 minutes and after 40 minutes. Total bake time: 60 minutes.

This is one of the easiest and quickest recipes I have made. It took about 5 min. to prepare and 20 min. to cook in the microwave. It tasted just as good as any baked corn pudding recipe baked...

I made this for my family at Thanksgiving and Christmas and have served it to friends on several occasions. It's quickly becoming a favorite sidedish.

Very easy recipe. A little bit bland but that's easily corrected with a dash of hot sauce. Made it for some Spanish guests and they LOVED it.

This was absolutely horrid. It came out a soggy wet mess, it was more like corn soup than pudding. I followed the recipe exactly so I'm not sure what went wrong. Sorry, but I won't be using this...

It tasted great but the consistancy was a little strange. I think it's from stirring the crust in every 20 minutes. Good overall.
