Directions

  1. In a small bowl, whisk together the gelatin and apple juice. Place bowl in a larger bowl with hot water and stir until gelatin is dissolved.
  2. Blend together the pumpkin, spice, sugar, honey and gelatin mixture.
  3. Spread 1/4 of the mixture in the bottom of custard cups. Top with 1/4 cup pineapple; repeat layers. Chill for 1 hour before serving.

I used agar agar instead of gelatin, and orange+apple juice instead of apple juice. Smells nice, but tastes like the spices. Will not be making again.

It was okay, but nothing great. I'd stick with the regular pumpkin pie.

I LOVE pumpkin anything and it's so good to have a recipe that is guilt free.
