Original recipe yields 10 servings
Directions
- Heat a large Dutch oven until hot over high heat. Add the ground beef, and cook until barely pink, stirring constantly to break into small pieces. Stir in onions and bell pepper, cook until the meat has browned, and the onions have softened and turned translucent, about 5 minutes. Pour meat into a large mesh strainer and press to expel excess fat.
- Place meat back into Dutch oven along with stewed tomatoes, kidney beans, tomato sauce, and pineapple chunks; season with chili powder and salt. Bring to a boil, then reduce heat to medium-low and simmer uncovered for 10 minutes, or until chili reaches desired consistency.

I really cannot imagine, even if i had used 2lbs of meat, using 6 onions. Also, I didn't drain the pineapples, which were packed in juice. The light sweetness really helped to balance out the heat. I followed directions except reduced onions and omitted chili pepper and salt as I used pinto beans in chili sauce that is plenty spicy for us. Finished it up in the crock pot because we like the onions and bell peppers pretty soft in our chili. Also used crushed pineapple with the juice. I think this is our new favorite chile. Thanks. UPDATE: I've made this several times since I rated it the first time and we still love it. Last night I maded it with no ground beef and it was still great.
