  1. Preheat oven to 350 degrees F (175 degrees C). Coat a 9x9 inch cooking dish with cooking spray.
  2. Heat 1 tablespoon oil in medium skillet. Saute the onion until soft and translucent.
  3. In a large bowl combine cottage cheese, cornflake crumbs, egg, oil and sauteed onion. Gradually stir in the milk to moisten. You might only need 1/2 cup of the milk, the mixture should be moist but not soupy.
  4. Spread the cottage cheese mixture into the prepared pan and bake at 350 degrees F (175 degrees C) for 30 to 40 minutes or until bubbly and a knife inserted in the center comes out clean.

I was a little skeptical about this recipe at first but it did seem interesting. we were actually blown away by the taste and ease of preparation. good recipe.

I've been making cottage cheese loaf for years, this is NOT the best one! It's missing celery, pecans, sage or some kind of seasoning..... and you CAN use bread crumbs instead of cornflakes.......

Instead of cornflakes, use Special K. You could even try Wheates. I'd use my leftovers for sandwiches in my lunch pail.

this was just okay for me. I felt it needed more so added a bit of tomato paste and sage/oregano. It turned out fine but was nothing too special.
