Original recipe yields 2 pizzas

Directions

  1. Mix the tomatoes and salt in a mesh strainer. Let mixture sit and drain for 15 minutes.
  2. Preheat oven to 450 degrees F (230 degrees C).
  3. Combine the drained tomatoes, 8 ounces of mozzarella cheese, onion, basil, pepper, olive oil, jalapenos, olives, and mushrooms in a bowl. Spread the pizza sauce evenly onto the pizza crusts. Distribute tomato mixture over the two pizza crusts evenly. Sprinkle 8 ounces of mozzarella cheese and the Parmesan cheese over both pizzas.
  4. Bake pizzas in preheated oven until cheese is completely melted, 8 to 10 minutes.

Instead of large tomatoes, I used 4 roma tomatoes seeded for one pizza and fresh basil from my garden. I also did not include mushrooms since I did not have any on hand and I left out the jalapeno. I used a yellow onion instead of a red onion. My husband and I devoured it and he said he loved it more than the pepperoni pizzas we always make at home. Can't wait to make it again. Thank you so much for this simple recipe."

I layered my sauce, cheeses, fresh basil & tomatoes then drizzled a bit of olive oil over top. It baked up beautifully and tasted great - especially with a nice glass of wine!"
