Simmering Chicken Strawberry Kabobs

Simmering Chicken Strawberry Kabobs

"This is a great recipe for a hot summer day, and it looks totally exotic so your guests will be amazed. You may want to spice the chicken up a bit more to add to the contrast between the meat and the fruit. Try adding some crushed chilies to your chicken marinade, or maybe some garam masala! ENJOY"

  1. In a shallow glass bowl combine lemon juice, juice from pineapple can, salt, pepper and 1 teaspoon cinnamon. Mix together. Add cubed chicken and marinate for 1 hour in the refrigerator.
  2. Preheat grill for medium heat and lightly oil the grate. Soak wooden skewers, if you're using them.
  3. Combine the melted butter, 1 teaspoon cinnamon, brown sugar, and nutmeg in a small bowl.
  4. Using metal or soaked wooden skewers, arrange chicken, pineapple chunks, and strawberries on each stick (approximately 4 to 6 pieces of each item per skewer). Brush kabobs with butter mixture. Place the kabobs on the hot grill. Cook, turning on all sides, until chicken is cooked through and strawberries are sizzling, approximately 8 to 10 minutes.

Pretty good, but I had trouble keeping the strawberries on the skewers. And instead of the lemon marinade, I used honey, lime and soy sauce...really good. My husband and I liked these a lot and ...

For a little bit of a contrast, add a vidalia onion or a red onion. It really compliments the fruits and chicken, making the kabobs not too sweet.

This was really good, but we added a few things to make it more interesting. I added onions, just to cut the over sweetness of the whole dish, and also parboiled some sweet potatoes, which ...

These are incredible Kabobs! They are really pretty and everyone loved them...I highly recommend them! Don't make more than you can eat in one day, because they don't make good leftovers, but th...

Took a little bit of time to make but was well worth the effort. This was so delicious!!!

The pineapple was SO good, but the strawberries didn't have much flavor. I think next time I'll just leave them out. The chicken was awesome with the nutmeg.

Didn't like this at all..strawberries had no problem keeping them on,...didnt like the cooked strawberry...

Exotic and yummy. Good if you like savory and sweet mixtures. Very different!!!

This was really yummy! I used more cinnamon and nutmeg than listed - doing it to taste. I also used more pineapple, and some green peppers to add more color. The roasted strawberry is very yummy...
