“Fresh cantaloupe, honeydew, peaches, strawberries, apples, and whatever else you have on hand are pureed to make a quick, delicious, and healthy pick-me-up breakfast or picnic side dish. Drop a few blueberries or raspberries in it to kick it up a notch! It's also a great way to use up leftovers from party platters!”

  1. Combine the peach, strawberries, apple, cantaloupe, and honeydew in a blender; blend until only slightly chunky, 20 to 30 seconds. Pour in the cream of coconut, nutmeg, honey, and lime juice; blend until smooth.
  2. Divide the mixture evenly between 8 bowls. Top each bowl with a few blueberries and serve cold.

Yum! Weirdly, I had all of the ingredients for this except honeydew, so I used more cantelope. My peaches and strawberries were frozen. I used coconut milk instead of cream of coconut, because that's what I had and its healthier anyway (this is plenty sweet without the added sugar). Next time I might leave it chunkier... Thanks for the recipe!

This soup was great! It paired well with a nice spinach and fruit salad. The nutmeg makes it feel more like a soup and less like a smoothie.

Delicious the just the way it is!
