Original recipe yields 6 servings
Directions
- Place carrots and potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two.
- Meanwhile, melt the butter in a small saucepan over medium heat, then stir in the applesauce and brown sugar until dissolved. When the potatoes are ready, transfer to a serving bowl and mash until smooth. Then fold in the applesauce mixture and raisins.

"As is, I think the recipe is really good. I used regular carrots and sliced them. I was surprised at how quickly the sweet potato cooked. Next time I think I'll start teh carrots and add the sweet ..." See morepotatoes after 5 min. I'll also get the applesauce out of the fridge and let it sit while cooking the potato and carrots. Our mash cooled down quite a bit with the addition of the applesauce. But really, I do think this is a good recipe. Next time I make it I'm sure I'll give it a "5 star". I think it could use a little something in the spice area, but I'm not sure what. If anyone has any thoughts, please post them. A little ginger maybe?"
