Directions
- Spray large nonstick skillet with nonstick cooking spray. Add meat and brown over medium-high heat; drain off excess fat.
- Add seasoning mix and water; stir. Bring to boil.
- Stir in rice. Sprinkle with cheese; cover. Reduce heat to low; simmer 5 minutes. Top with lettuce and tomato just before serving.

I used 3 cups of rice instead of 2 and waited until the rice was cooked before I added the cheese. I also added about a half a can of corn and a small can of sliced black olives. I added some medium salsa as well to brighten it up. It was great with tortilla chips! So easy! Will add this to our dinner rotation!!"
