Directions
- Preheat the oven to 400 degrees F (200 degrees C). Place the edamame into a colander and rinse under cold water to thaw. Drain.
- Spread the edamame beans into the bottom of a 9x13 inch baking dish. Drizzle with olive oil. Sprinkle cheese over the top and season with salt and pepper.
- Bake in the preheated oven until the cheese is crispy and golden, about 15 minutes.

I should add that I don't thaw the edamame, but I just mix the ingredients together with the frozen edamame and place them directly into the oven. That might be why they always turn nice and crispy for me! UPDATE: I've lost count how many times I've made this recipe! I ran out of parchment last night and I decided to add them to a pan coated with Pam. BIG MISTAKE! They turned out soggy, sticky and gross!!! DO NOT baked this on tin foil or directly on the pan.
