Based on a 2,000 calorie diet


  1. Mix together the sweet potatoes, onion, coconut, flour, semolina, and syrup in a large bowl. Mix in the eggs. Form the mixture into 4 patties.
  2. Mix together the yogurt, half and half, pineapple juice, and cayenne pepper in a separate bowl. Set aside until serving.
  3. Heat the oil in a skillet over medium-high heat. Cook the patties in the hot oil until crisp, 3 to 5 minutes per side. Transfer to plate lined with paper towels.
  4. Serve patties hot with yogurt mixture on the side.

Ohhhh my! this was wonderful, the flavors were fabulous, sweet, nutty, crispy and zingy all at the same time! Will Definitely be making this again!

I admit my heart wasn’t in it. I estimated each ingredient and threw it in the bowl. I had no semolina. Who cares? I’m too lazy to dirty another bowl, so I don’t bother making the dipping sauce. It was just one of those days. So, despite my lethargic, careless attitude, this came out great and I thought it was very good.


These patties were great! I made them exactly as the recipe says. I changed the sauce only because we accidentally bought vanilla yogurt and decided adding pineapple juice would be much too sweet. BUT, we happened to have a jar of pineapple salsa (just pineapple and spice, no tomato) in the fridge. That handled the fruity and the spicy, while the yogurt contributed creamy and sweet. Awesome all around!
