Original recipe yields 6 servings
Directions
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain.
- In a large bowl combine pineapple, red pepper, red onion, jalapeno pepper, orange juice, and lime juice. Mix well and set aside.
- Prepare an outdoor grill with an oiled rack set 6 inches from the coals. On a gas grill, place the setting to high. Grill the shrimp for 2 minutes per side.
- Toss the cooked noodles with the salsa. Arrange the shrimp on the pasta and serve.

See moret with some EVOO, garlic and about 1/4 cup of the juice from the salsa (there is a lot so it won't affect the taste of the salsa at all). Then served the shrimp with the salsa to top it off. It is not so good left over...all the citrus makes the pasta and shrimp mushy, so make only as much as you will use. Also, I used a whole pineapple and all the juices from cutting it. I added the pineapple juice with the other juices. Over all a great salad and I will make it again."
