I cut this recipe in half. I did not have fresh pineapple, I used one large can DRAINED pineapple chunks. I also used nonfat greek yogurt and added a tsp. of vanilla to makeshift vanilla-flavore...

I made this with unsweetened coconut, but the fresh pineapple I had was quite sweet so it balanced out. Loved the coconut milk in this salad! Will definitely be making this again!
