Original recipe yields 16 pancakes

Directions

  1. In 12-inch nonstick skillet cook bacon and onions until browned. Remove from skillet. Reserve 1 tablespoon bacon grease. Set aside bacon and onions.
  2. Meanwhile, in large bowl stir together Simply Potatoes, baking mix, cheese, cooked bacon and onions. Stir in milk and egg just until moistened.
  3. Heat bacon grease in skillet over medium heat. Spoon four generous 1/4 cups of potato mixture into skillet at a time. Flatten slightly into pancakes. Cook each pancake about 2 minutes on each side or until golden brown. Use additional vegetable oil in skillet if needed.

Super yummy! Saw a couple posts about these being bland. I added about a 1/2 tsp or so of seasoning salt, about a 1/4 cup of Panko and used 1/4 cup dehydrated onions instead of the fresh onion and they tasted awesome! Definitely not tasteless. Wonderful for a relaxing Sunday brunch!

I doubled the recipe for my family of five and they ate the entire thing. Instead of green onions, I cooked a chopped yellow onion to golden brown. I also cooked the bacon first before chopping - too difficult the other way. Added salt and pepper to the batter. I served these with corned beef along with sour cream and sauerkraut
