  1. Heat the vegetable oil in a large skillet over medium heat. Add the potatoes, cover, and cook, stirring occasionally until they begin to soften, about 10 minutes. Stir in the nopalitos, onion, tomato, and jalapeno. Season to taste with salt, and continue cooking and stirring until the onion has softened and turned translucent, and the potatoes are tender, about 10 minutes more.

This was great, only I used fresh cactus as I don't like the canned ones.

this recipe was really good. i had been looking for another way to use the nopales. it was so delious but the only thing that i added was some tomato bouillion which gave it extra flavor. so goo...

I found this recipe quite simple to make yet very tasting. Though to add a bit of spice, I added a habanero pepper as well.
