  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8 square baking dish.
  2. Combine the black beans, eggs, oil, cocoa powder, salt, vanilla extract, sugar, and instant coffee in a blender; blend until smooth; pour the mixture into the prepared baking dish. Sprinkle the chocolate chips over the top of the mixture.
  3. Bake in the preheated oven until the top is dry and the edges start to pull away from the sides of the pan, about 30 minutes.

YUM! I do not eat grains or dairy, so this recipe was perfect! I did make a few changes to make it a bit healthier: I used 1/2 cup of unsweetened applesauce instead of vegetable oil, and Eggbeat...

I have a killer sweet tooth and I have to say these are pretty gosh darn good. I experimented a little and found that adding about a teaspoon of baking powder gives a little more cake-like brow...

I've had these before and they were excellent however, I would not recommend using special dark cocoa...it makes the recipe unedible.
