Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  2. In a large soup pot, boil sweet potatoes whole until soft. Remove skins, and dice into bite-sized pieces.
  3. Mix sweet potatoes, crushed pineapple, light brown sugar, and butter in prepared baking dish.
  4. Bake for 45 minutes, or until casserole is mushy with no excess water in the dish.

Wonderful! Just a little tweaking and it came out great! I found that a 9x13 pan was a little too big, maybe a 9x9 would do better? Also, I added a full cup of pineapple along with some cinnamon. Not too sweet, not too tangy. Thanks for sharing this recipe!

Wow, was this good (and easy)! To save time, I peeled and cubed the sweet potatoes, boiled them for 8 minutes, then drained. I also added 1 cup pineapple instead of 1/2 cup. I, too, used a 9x9" baking dish, as others suggested (perfect size!). My recipe was ready after 30 minutes of baking. Thanks so much for the recipe!

this is fantastic!! i would give it 10 stars if i could as would EVERYONE at thanksgiving dinner where i brought this as my contribution. as usual i changed something--topping made of ½ cup brown sugar, ½ cup flour, 1/3 cup melted margarine, ¾ cup chopped pecans, 6 slices canned pineapple rings, -Beautiful dish. use sweet potatoes, not yams
