Original recipe yields 4 pint jars

Directions

  1. Stir together papaya, orange juice, and pectin in a very large pot over medium-high heat until it begins to boil. Stir constantly as the mixture heats. Once boiling, stir in the sugar, and return to a boil, stirring constantly. Once the jam has returned to a boil, start a timer, and boil for exactly 1 minute.
  2. Ladle the hot jam into the hot, sterilized canning jars and seal with lids and rings. Allow to cool to room temperature, and refrigerate any jars that do not seal.

Yummy! I didn't have any orange juice so I used lime in its place I really liked the different flavor.

This is a great jam. However, it can be improved upon. I like my jam with a little more zestiness. So, instead of using orange juice I have used lilikoi juice (which is a Hawaiian passionfruit). That is fabulous. People keep telling me to eat papaya with lime juice, so I just tried that - substituting the orange juice with lime juice. Also great. Both make the jam 'pop'. yum.

I love this jam! We have had a ton of papaya from our tree and so glad I found a recipe I can use for all of them! Tried it with orange juice and just used only 1 package of pectin. It came out perfect. I'm going to try lemon juice on the next batch!
