Original recipe yields 6 servings

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large bowl, combine the beef, eggs, onion, barbecue sauce, cracker crumbs, potato chips, liquid smoke, ground black pepper, salt, garlic powder and cayenne pepper and mix well.
  3. On a lightly greased cookie sheet, shape the mixture into a loaf. Lay the bacon slices across the width of the loaf so that the entire surface is covered. Cover the loaf loosely with foil.
  4. Bake at 375 degrees F (190 degrees C) for 1 1/2 hours.

My DH (lover of all things meatloaf) proclaimed this "the best meatloaf I have ever had!" I swear there was a tear in his eye! All evening after dinner he would sniff the air (it did smell wonderful) and say "boy that meatloaf was good!" I suspect that at lunch time DH and my mom will be trying to outwit each other to make a sandwich out of the last piece. I only hope that before they hurt each other they realize that I snuck it out in my lunch bag when I left for work this morning. (insert diabolical laugh here)"

It was perfectly done, and everyone who ate it was obsessed about getting the recipe from me.
