Directions

  1. In skillet over medium heat crumble and cook sausage and onions until brown. Stir in BBQ sauce. Lay 2 of the tortillas on a flat surface. Top each with 1/4 cup cheese. Divide sausage mixture between the two. Sprinkle each with 1/4 cup cheese. Top with remaining tortillas. Heat large skillet over medium heat. Add a small amount of oil to coat bottom of skillet. Cook one quesadilla at a time until golden brown on each side, about 2 to 3 minutes per side. Cut into wedges and serve with sour cream and salsa.

excellent recipe and taste, but not for the grill, stove top is best in my opinion

I had leftover browned sausage from the broccoli/sausage pasta dish I made the night before, so I gave this recipe a try. These were pretty good - messy, but good! I added a handful of fresh baby spinach leaves to add some green - I bet cilantro would be a good addition as well. I served with sour cream, but the salsa didn't sound right to me, combining with the bbq sauce. A tasty variation on the usual quesadilla-thanks for the recipe!

I used whole wheat tortillas, and I think flour would've been better. Also, I wish I had used more cheese.
