Original recipe yields 8 kid-size servings

Directions

  1. In a large bowl, combine the ketchup, brown sugar and mustard and mix well. Remove 4 tablespoons of this mixture and reserve for later for the top of the loaves. To the mixture in the bowl, add the Worcestershire sauce, salt, onion, garlic, egg, milk and ground black pepper and mix together well.
  2. Stir in the wheat cereal squares and let stand for 5 minutes. Then break up the cereal squares and add the ground beef, mixing well. Shape the mixture into the mini loaf pans you've decided to use.
  3. Bake at 350 degrees F (175 degrees C) for 65 minutes. Brush on reserved ketchup mixture and bake for 15 more minutes.

"This is seriously one of the better meatloaves I've every had. I added one cup of shredded mozzarella cheese, and it tastes just like moms. I used rice chex and was surprised at how many people neve..." See morer heard of using cereal in meatloaf before; it is common in west central PA. I baked it on a cookie sheet and put a small cooling rack on the cookie sheet and the meatloaf on top of that. This way, the grease drips off the meatloaf and onto the cookie sheet (and you can line the sheet with foil for easy clean-up!) I did not reserve any of the ketchup/br. sugar mixture, but mixed it all in and it was very moist and tender. I mixed mustard, ketchup, and worcestershire sauce and spread it on top before I baked it. THANKS FOR THE RECIPE! I'll make this again and again."
