  1. Remove stems from spinach and stack leaves together; chop thin longer strips instead of square chops and set aside.
  2. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and place in a large bowl.
  3. Drizzle olive oil over pasta and add salt and pepper to taste, spinach and tomatoes; gently toss.
  4. Add goat cheese and serve warm or room temperature.

Great recipe. I tossed in a bit of crushed garlic for additional flavor. I was not sure what type of goat cheese to use so I picked chevre -- which was awesome. It made a creamy sauce to complem...

I used seasoned feta cheese, which had sun dried tomatoes and italian seasoning mixed in. This added a nice extra flavor to the pasta, though it is also good with plain feta!

I served this pasta dish on Valentines days with filet mignon. It was the perfect companion. Next time, I think I might add a little black olive, but I can't wait to make it again.

I think this recipe would be much better with a little less goat cheese. I used the full 8 oz. and it was way too rich for me. I just couldn't eat very much of it. Maybe it's just me though. Ver...

This was quite tasty. I added a sauteed clove of garlic and some chopped basil leaves based on the reviews.

I replaced the goat cheese with crumbled garlic tofu. This was great..... very fresh tasting!
