This apple tube cake is my families favorite cake. It is the easiest cake to make and you can't ruin it. Great with fresh apples, but you can substitute canned apples. If you keep a can on hand, you will always have the ingredients for a delicious last minute cake!

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 10 inch tube pan. In a medium-size mixing bowl, combine the apples, 1/2 cup of sugar and 1 tablespoon cinnamon. Stir so that the apples are coated.
  2. In a large bowl, combine the 2 cups of sugar, oil and eggs. Mix well. Combine the flour, and baking powder and add to the sugar mixture. Mix until blended. Then stir in the vanilla and orange juice. Pour half of the batter into the prepared pan, top with half of the sliced apples. Pour the other half of the batter over the apples and then top with the remaining apples. Also, pour any juice from the apples onto the cake.
  3. Bake for 1 hour and 15 minutes in the preheated oven, or until a knife inserted into the cake comes out clean. Cover the cake with aluminum foil for the last 15 minutes so that the top will not burn.

This was yummy! In texture, it is very similar to a coffee cake. Since other reviewers were having trouble with their apples sinking, I chose to grate mine- this worked perfectly. Also- I did not have any OJ on hand so I subbed lemon juice which worked out just fine as well. We made a homemade caramel sauce to drizzle over the top- everyone enjoyed this and we will make it again. Thanks!

The 4 apples were so heavy they sank to the bottom, this spoiled the looks and texture of the cake. I will try it again with my own changes to the recipe.

Well, I think four apples are too much apples, and I have to say that due to the amount of mixture I had, I had to do two cakes instead of one. The apples coates weighed too much and went to the bottom of the baking tin, and got stuck. However my friends loved it!!! Really tasty.
