Directions

  1. Beat together cream cheese and Cheddar cheese. Stir in honey and carrots. Refrigerate the mixture until cooled.
  2. When the mixture is cool, shape it into balls. Combine the cereal and parsley. Roll the balls in the cereal-parsley mixture and serve.

Kind of weird -- the combination of ingredients yields an unusual taste that's difficult to pinpoint. More of a kid's snack than a "grown-up" hors d'oeuvres.

I'll delete this one from my recipe list. I tried. Didn't like. No offense to anyone else, but my taste buds weren't diggin' it. Gave it one star for texture. I liked the combination of the creaminess and crunchiness before the cereal got soggy tasting. This is one of those things that must be eaten right away as it is best cold.
