Original recipe yields 1 - 8x4 inch loaf pan

Directions

  1. Preheat oven to 325 degrees F (165 degrees C). Lightly grease an 8x4 inch loaf pan.
  2. In a large bowl, cream the shortening and sugar. Sift in the flour, baking soda and salt. Blend in the mashed bananas. Pour batter into prepared pan.
  3. Bake in preheated oven for 60 minutes, or until a knife inserted into center of loaf comes out clean.

This morning I used 1 banana, 1 peach and a 1/2 cup of shredded zuchinni and a handful of raisins. Yesterday it was 1 banana and 1 c of zuchinni. Before that it was all zuchinni and a 1/2 c pineapple and raisins. This recipe hasn't failed on me yet!"
