  1. Cook the chicken and garlic in a 10-inch nonstick skillet over medium-high heat until it's well browned, stirring often. Remove the chicken from the skillet.
  2. Add the stock, tomatoes, Italian seasoning and rice to the skillet and heat to a boil. Reduce the heat to low. Cover and cook for 15 minutes.
  3. Stir in the cheese. Return the chicken to the skillet. Cover and cook for 5 minutes or until the chicken is cooked through and the rice is tender.

Great recipe! Followed it as-is except for the tomatoes - I didn't see the point in opening a whole can of diced tomatoes for 1 Tablespoon so I just used a regular tomato and diced it. Easy, sim...

The original recipe was very good. The second time I made it I lightly seasoned the chicken w/ salt,pepper, & the Italian seasoning. Cut it into 1 in. chunks, covered it & cooked it on med. heat...

This was AMAZING. So easy to make. The only thing I will do differently next time is to cook the rice for a while ahead of time so its tender and add some more tomatoes. Will be making this agai...
