“Ham, pineapples, apples and brown sugar, all stir-fried together and cooked in the pineapple juice. This is wonderful served over couscous.” - by Caity-O
Original recipe yields 2 to 4 servings
- Heat the oil in a large skillet over medium heat. Saute the ham and onion in the skillet for 5 minutes. Add 1/2 the amount of juice from the can of pineapple and allow it to be absorbed by the ham, about 1 to 2 minutes.
- Stir in the pineapple chunks, apple and brown sugar. Pour in any remaining pineapple juice only if mixture is getting too thick. Stir all ingredients together well and allow to heat through, about 5 minutes. Season with salt and pepper to taste.

Note that if you don't peel the apple, the peel 'bleeds' on it..." See moreself after a day or two, and doesn't look very pretty. The 2nd time I made this, I used pineapple chunks instead of crushed. I think I prefer the chunks! Note that one bunch of chopped green onions goes better with this dish than regular onions (in my opinion), and it also adds some color. I didn't find salt and pepper necessary, by the way. Thanks for the recipe!"
