Original recipe yields 6 servings

Directions

  1. Preheat oven to 375 degrees F.
  2. Cook beef and oregano in skillet until browned. Pour off fat. Add picante sauce, tomato sauce and corn. Heat through. Stir in cheese. Pour into 2-quart shallow baking dish. Mix corn muffin mix according to package directions. Spread over beef mixture.
  3. Bake 25 to 30 minutes or until crust is golden brown. Let stand 10 minutes.

I had to substitute diced tomatoes for the tomato sauce, but it still came out great. I also added a chopped onion to the meat as it was cooking. This dish was substantial, filling, and had a zesty taste that totally obscured the fact that it was 'plain old' ground beef. Even my kids liked it. You could even add more shredded cheese if you are a cheese person. You should try it. I will definitely make this again."
