  1. Preheat an outdoor grill for medium heat and lightly oil grate.
  2. Lightly spray a saute pan with cooking or oil spray over medium heat. Saute the onion with the garlic first, then the bell pepper, then the mushrooms, tomatoes and carrots, all to desired tenderness. Set aside and allow all vegetables to cool completely.
  3. In a large bowl, combine the chicken and vegetables. Add the egg, bread crumbs and seasonings to taste. Mix all together well and form into 8 patties.
  4. Grill over medium heat for 5 to 6 minutes per side, or to desired doneness.

  • Aluminum foil can be used to keep food moist, cook it evenly, and make clean-up easier.

As burgers, this just did not work for me-- I would have needed to add several times more the amount of bread crumbs to get patties that would stand up to the rigors of grilling. Not to be dete...

Very good stuff! If you're scaling, however, keep the amount of egg and bread crumbs the same, or you'll get goopy burgers.

Really good. This can be made into a very delicious vegetarian version by using the mock chicken recipe.

These were pretty good but not outstanding. The red bell pepper worked well, but I am not so sure about the carrot. Also, I wish I had used Cavenders Greek Seasoning and not Old Bay Seasoning - ...

I cut the receipe in half but kept the bread crumbs the same as someone suggested. These came out great. We wil be making these again :)

it was ok, I had to add a lot more bread crumbs because otherwise they would not stay together, also had trouble staying together on the grill. tasted good though!
