Original recipe yields 6 to 8 servings
Directions
- In a large pot over medium heat, saute the onion and green bell pepper in the oil for 5 to 10 minutes, or until the onion is translucent.
- Pour in the tomatoes, water and rice. Raise heat to high and bring to a boil, then reduce heat to low and simmer for 20 minutes.
- Stir in the sauerkraut and sausage, stirring thoroughly, and let simmer for 20 more minutes. Season with salt and pepper to taste.

I only used 2 cups of water and added an extra cup of rice (2 cups total). I really wanted this to be thick! With the liquid from the tomatoes, it worked out well. I did drain the sauerkraut. I also added basil and horseradish (thanks for the suggestion) with the tomatoes. I was really happy with the results. It was hearty and had a really nice flavor.
