I used real bacon and I used 1/2 cheddar and 1/2 smoked gouda like some other reviewers suggested. I almost made a half size dish since it was just for my son and me but I decided I might want leftovers so I made it full scale - that was a great decision b/c I KNOW I will want more tomorrow!
This recipe is AWESOME! I had been looking for a good mac & cheese recipe that didn't call for Velveeta or bread crumbs, and this one is perfect. It was creamy and delicious. Instead of the bacon, I added grilled chicken and steamed broccoli. I will definitely be making this again.
Definitely the recipe I was looking for. Creamy and cheesy. I was using the one that adds cottage cheese, but this one tastes the way you expect mac and cheese to taste. The only thing I did differently was to use regular bacon. This is the recipe I'll go to when I'm craving mac and cheese.
