Original recipe yields 14 to 16 servings

Directions

  1. Prepare the rice in a large pot according to package directions.
  2. Cut the kielbasa into 1-inch chunks and quarter the chunks. Place in a large skillet over medium-high heat for about 5 to 10 minutes, or until lightly browned. Season with cayenne pepper to taste. Transfer this to the pot with the rice, reserving the grease in the skillet.
  3. In the same skillet over medium-high heat, saute the ground beef for 5 minutes. Stir in the rice, and onion; reduce heat to medium and saute for 5 more minutes. Drain well and add to the pot. Stir the kidney beans, pinto beans, and pork and beans into the pot. Add a little water, if necessary, and simmer over low heat until ready to serve.

"This looked interesting. I made a lot less though, only 2 cups of uncooked rice, half a kielbasa and I just eyed the amount of ground beef I wanted to use. I still used about 1/4 cup onion, about a ..." See moreteaspoon of garlic and LOTS of cajun seasoning, which had cayenne pepper and other spices in it. Salt & pepper to taste. I used 1 can each of black beans and kidney beans. It still made PLENTY. I did add about 1/4 water and a little 'juice' from the black beans since other reviewers said it was dry. I'm glad I did. It was tasty and I think it will taste even better as leftovers. This was easy to modify to my taste, don't be afraid to experiment."
