Original recipe yields 2 dozen

Directions

  1. In a medium saucepan, combine the raisins, apples and water. Bring to a boil and cook for 3 minutes. Remove from heat and stir in the butter. Set aside to cool.
  2. In a medium bowl, stir together the flour and baking soda. Stir in the vanilla, eggs and the apple mixture until well blended. Fold in the oats and nuts. Cover dough and chill 8 hours or overnight.
  3. Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. Drop by rounded spoonfuls onto the prepared cookie sheet.
  4. Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

I baked 1/2 of the batch right away and then waited 8 hours for the rest. I recommend cooking them right away. Otherwise they tasted dry and blah. Also I flattened them into patties before baking. Even with adding the chocolate chips it was less sugar over all than your typical cookie. I loved it."

I a..." See moredded 1 t. cinnamon and 1/2 t. nutmeg, which added some extra flavor. I'll do a touch more cinnamon next time. I didn't chill the dough for eight hours, either. I put the bowl of dough in the freezer for about 10 minutes while the oven preheated, and then put it back in the freezer while each batch baked. They took exactly 12 minutes per batch and were nice and soft. I think I'll also try grating the apples with a box grater next time to save the chopping time."
