Directions

  1. Preheat the oven to 325 degrees F (165 degrees C). Lightly grease a 9x13 inch pan.
  2. In a large bowl, combine the yellow cake mix, melted margarine and 1 egg. Mix until smooth, then spread evenly into the prepared pan. In a separate bowl, cream together the confectioners' sugar, 2 eggs and cream cheese until light and fluffy. Stir in the lemon cake mix, until well blended. Spread evenly over the first layer. Sprinkle with pecans.
  3. Bake for 35 to 40 minutes in the preheated oven, until a knife inserted into the center, comes out clean. Cool and cut into bars.

I rated this in the middle, but after my revisions, it would be 5 *'s. Use only 1 cup confectioner's sugar, use butter instead of margarine, add a second stick of melted butter to the lemon mixture, and top with 3 ounces sliced almonds.

I also used butter instead of margarine - and I used less powdered sugar. I was searching for this recipe because we used to make it all the time but I couldn't find mine and I couldn't remember how many eggs. We've never used pecans, so I didn't today, but perhaps next time! Our family and friends love this gooey bar - as do starving, homesick college kids and now starving, overwhelmed med school students!!!
