  1. Coat large nonstick skillet with nonstick cooking spray; heat skillet over medium-high heat. Stir-fry pork and green pepper in hot skillet for 3 to 4 minutes or until pork is lightly browned. Stir in salsa; heat through.
  2. Wrap tortillas in paper towels. Microwave on HIGH power about 30 seconds or until warm. Spoon pork mixture onto tortillas; sprinkle with cheese. If desired, top with cilantro or parsley. Fold in ends; roll up tortillas. Serve with additional salsa.
Tips & Tricks


  • Tip: For a variation, use ground pork instead of pork roast strips. Cook ground pork until meat is brown; drain excess fat.

Pretty good ! Very easy to put together in about a half-hour. I partially thawed two frozen 1/2-pound pork chops and sliced those into strips. And, instead of warming the tortillas in the microwave, I fried them in a frying pan lightly oiled with olive oil on medium heat, about 20 seconds on each side.


Pretty good. I added some red pepper and purple onion to the mix as well. Served with a little grated cheese and sour cream. Very quick and easy meal.
