  1. In a large mixing bowl, combine eggs, applesauce, cinnamon, sugar, flour, baking powder, vanilla, and raisins. Form small cakes out of the batter.
  2. Heat a nonstick griddle over medium heat, fry the cakes until both sides are browned, about 5 to 7 minutes.

Wonderful. I used white flour, 'cause that's all I had, and added 1/4 tsp nutmeg. Skipped the sugar,and added 1/2 chopped fresh apple. Moist, delicious. Terrific!
